Beavertail from my signature pizza dough

Beavertail is traditional Canadian fried-dough pastry, coated with cinnamon and sugar, but there are endless flavour combinations if you want to top it with sweet condiments.



The dough of the beavertail is light and airy yet crispy. I like to control the sweetness with the different flavour combinations. If I want it less sweet, I use more fruits as toppings, while a layer of chocolate spread or Nutella can satisfy any sweet tooth.

There are many Beavertail recipes on the internet using different ingredients. Some has eggs while others have dairy added. In order to avoid allergies and simplify things, Beavertail can be made using a pizza dough with the basic 4 ingredients (water, flour, salt, yeast).

Whenever it is time to make homemade pizzas for the family, you can always use a portion of the dough to serve your own Beavertail as dessert. It is a good idea to cut a few mini dough balls beside the regular ones for your pizzas, dedicated to Beavertail purpose. You can make them for later use by freezing those dough balls, just thaw as many as you need.

In my recipes you find the part when you roll the dough balls, then you normally have to wait 4-6 hours before you start stretching them out for pizza making. Here are the steps to follow to make your own Beavertail:

  1. You have your small dough balls rolled for Beavertail. If you want to freeze them for later, this is the time to do it so.
  2. A few minutes after rolling the balls freshly (or when they thawed out completely if they come from the freezer), create the long beavertail shape, apply some oil on the top then cover them with food wrap or kitchen towel.
  3. Let them rest at room temperature until they at least double in size and become very loose in texture (the time varies depending on the ambient temperature).
  4. Gently handle the dough pieces, try to keep the shape when you transfer them to the frying pan.
  5. Fry your dough to golden colour in generous amount of oil.
  6. Coat it with sugar, cinnamon or add your favourite topping combination.
  7. Enjoy your homemade Beavertail!
