Bread baking in general, but sourdough certainly can be very intimidating at first glance. There are tons of over complicated recipes and methods that can be found online. They can easily confuse, overwhelm and scare away any beginners who want to learn this wonderful baking method. My goal is to simplify things for you and make your baking journey to be real fun and joy.

I want to share why sourdough bread baking fascinates me every single day. I feel a very strong connection with this ancient fermentation method. One of the main reasons is that there are very few things remaining in our everyday life that did not go through some sort of modernization due to the vast scientific and technological advancements in the last few decades. Baking with “mother yeast” is one of them. Knowing that sourdough bread has been baked the same way for thousands of years is like time travel for me.

It is mesmerizing that with sourdough we can eat the same bread that our great grandmother ate, and that it is a knowledge that passed down through generations without any modification. First of all the sourdough starter is a natural bacteria culture that ferments the dough so perfectly, that it becomes very easily digestible. The unique flavour of the bread created by wild yeast culture is simply out of this world for me. It is also very important to know what ingredients our bread contains. The concern about what we consume with all the pre-made food sold by grocery stores is very real. Therefore its purism is a huge appeal to me. It is almost unbelievable that if I take flour, water, (wild) yeast and salt, and play around with time and temperature, what comes out of the oven is something utterly transformed and magical. I just have to practice, observe and practice more to get better and better as a sourdough baker.

Last but not least I have to mention a very important factor. As simple as sourdough is by the number of ingredients, it requires only a small number of equipment for the baking the best bread you have ever tasted. You do not need fancy and expensive kitchen gadgets or a state-of-the-art oven. Any oven with 450F (232 Celsius) capability can do an amazing job.
